Six years ago, while riding back roads through the mountains of Puebla, I stumbled upon Evaristo Vivero’s family farm. His enthusiasm for coffee was instant and contagious—and when I tasted that first sample, it stopped me in my tracks. Unlike anything else I’d collected in the region, it shattered every expectation I had for Puebla’s potential. Back home, I shared it with fellow roasters, and one by one, they fell silent in awe. We all knew: I’d found a hidden gem.
This washed coffee is a radiant expression of Sierra Norte’s terroir: clean, vibrant, and layered with notes of cacao, Jamaica flower, grapefruit, and a delicate floral finish. But what makes it unforgettable is the story behind it—Evaristo’s transparency, our years of friendship, and his relentless pursuit of quality through sustainable farming.
A textbook example of the region’s terroir at its finest.
