This coffee is from a collective of organic coffee producers in the Cordoba region of Veracruz. In the city of Cordoba it is processed by the decaffeination facility called Descamex. The process that they use to decaffeinate is called mountain water and has very similar qualities as the Swiss Water Process. Since the process is using water instead of solvents or chemicals they can decaffeinate organic coffees and maintain the organic certification. This coffee is a very sweet and clean washed coffee with the classic characteristics of a well selected and processed Veracruz coffee. You will be pleasantly surprised by the sweetness of this decaf. I cupped this coffee before and after decaffeination and it didn't loose its vibrancy in the processing.
